About Sentli:
Founded in 2021 by Chef Ernesto Torres Lemus, Sentli brings authentic Mexican flavors and tradition to Albuquerque. Ernesto honed his business skills through the Street Food Institute, introduced his food through samples at Rail Yards Market, hosted pop-ups at local breweries, and grew by catering private events—building a reputation for thoughtful, flavor-forward cuisine.
In 2026 Sentli launched a molino project to nixtamalize locally grown corn using time-honored Mexican methods, creating fresh masa for tortillas and other specialties. Today Sentli balances masa production with curated special events, and will begin hands-on cooking classes in Summer 2026.
